Gulai Hijau Ayam – Green Chicken Curry

SONY DSCIngredients
750g chicken thigh fillets
3 shallots or half a large brown onion (approx 120g)
3 green chillis – approx 150g
4 Birds eye chillis (optional – or more if you like it hot)
2.5cm cube of fresh Ginger
3 cloves of Garlic
1 teaspoon Turmeric powder
1 bay leaf
15cm stalk of Lemongrass
3cm x 1 cm piece of Galangal
2 tablespoons of vegetable oil
200ml coconut cream
400ml water
Salt

Green curry chicken chop ingredientsMethod 
Chop the chicken thighs into thirds.
Roughly chop the onions, chillis, garlic and ginger and process with a stick mixer or in a food processor.
If using shallots you may need to add a little oil to help the blades to move.

Green curry chicken add turmericAdd the turmeric to the onion paste.

Green curry chicken fry pasteHeat 2 tablespoons of oil in a wok or pan, add the onion paste and fry until it is beginning to go golden.

Green curry chicken add chickenAdd the chicken pieces to the pan and stir to coat in the paste.

Add the bayleaf, lemon grass (bend it in half to help release the flavours), and the piece of galangal.

Green curry chicken simmerPour in the coconut cream and the water to cover the chicken.
Simmer over low heat until the chicken is cooked through and the sauce has reduced.
Add extra water if it is reducing too quickly.
Season with salt to taste.
