This fish recipe reminds me of Spanish Escabeche which has made its way around the world. It’s simple, delicious, typical Padang food. Fish is fried then doused in a vinegar dressing spiced with whole garlic, shallots and chillis cooked so tender they can be mashed into your accompanying rice. (Dad says it’s traditional for the table to vie for who gets to enjoy the whole chillis!)

Getting started
I’m pleased to say I’ve now posted my first four recipes.
Green beans and chicken livers in a tauco (soybean) sauce, a delicious green curry of chicken (I think this is my favourite so far because of the colour which is actually much prettier than the picture shows), fried fish in a spiced vinegar dressing and a hot and sour beef that I remember as one of Dad’s regular go to dishes.
The household is enjoying eating the result of my efforts and the fridge door will barely close. Big plans for more on the weekend. Stay tuned.
